Chef Pasquale Carfora and his team from Restaurant Aroma Italian Fine Dining recently completed a successful ‘kitchen takeover’ at the Michelin-recommended restaurant Finz in the luxurious five-star Rotana Hotel in Abu Dhabi.
At the invitation of his former executive chef at Krasnapolsky, Scott Valentine – now president of Food & Beverage at Rotana Hotel Group – Restaurant Aroma had the opportunity to inspire the local brigade with a complete menu in Aroma style.
From January 29th to February 1st, the Restaurant Aroma team served a six-course menu featuring their signature dishes:
- Restaurant Aroma’s signature ‘snacks’ (Chocolate olive, Fake turtle, Octopus bonbon)
- Seafood in different structures with buffalo yoghurt and 25-year-old balsamic vinegar from Modena
- Sea bass ‘all’acqua pazza’
- Passatelli with 90-month aged parmesan and poultry jus
- Tortelli with turbot and winter truffle
- Pressure-cooked cod with Pecorino Romano and artichokes
- Honey mousse as pre-dessert
- Restaurant Aroma’s famous ‘Delizia al limone’ to finish
With a fully booked restaurant every day and enthusiastic responses from both local guests and residents of the United Arab Emirates, Restaurant Aroma can look back on a particularly successful culinary adventure!
