Press Release | Restaurant Aroma in Vaassen announces an exclusive culinary collaboration with renowned Italian Michelin-starred chef Flavio Costa from Ristorante 21.9* in Piedmont. On Tuesday, 9th April, Chef Costa will visit the Veluwe-based restaurant for a unique gastronomic evening.

“Our paths crossed two years ago when I visited the Barolo and Alba region in search of new wines and culinary inspiration,” explains Chef Pasquale Carfora. “During a visit to his restaurant, I was immediately impressed by his philosophy on flavour and simplicity. We share the same vision about preserving authentic tastes, cherishing simplicity and working from tradition and memories. Our conversation was so fascinating and inspiring that I decided to invite him to share this special experience with our guests.”

Chef Flavio Costa ranks among the elite of Italian gastronomy. He earned his first Michelin star many years ago and continues to maintain the highest culinary standards at his restaurant 21.9* in Piedmont. His cuisine is characterised by a deep respect for seasonal ingredients and local traditions, combined with a modern, innovative approach.

Beyond his impressive restaurant, Costa has also collaborated with renowned Italian brands such as Barilla, the world-famous pasta producer, where he lent his expertise to develop new concepts and premium pasta dishes. His profound knowledge of Piedmontese cuisine and wine culture makes him a perfect ambassador of this rich gastronomic region.

Tradition of Gastronomic Exchanges

This collaboration fits seamlessly into an ongoing tradition that Aroma has built with special culinary exchanges. Previously, the restaurant welcomed Italian JRE star chef Simone Nardoni from restaurant Essenza*, the talented duo Sara Scarsella and Matteo Compagnucci from restaurant Sintesi*, and last year organised a memorable ‘four-hands’ dinner with Trattoria Buccia. These events offer Aroma’s guests the opportunity to experience unique interpretations of Italian cuisine and give the restaurant’s front and back of house teams inspiration for new culinary horizons.

Italian Flavours and Traditions

During this special evening, a carefully composed six-course menu will be served featuring signature dishes from both chefs. Each course will be accompanied by exclusive wines from the prestigious winery Tenuta Carretta, known for their exceptional Barbaresco and Barolo wines.

Price: € 265 per person, all-inclusive (aperitif, wine pairing, Italian mineral water, coffee, digestives and grappas)
